Trái sấu ngon là những trái già vừa, không non quá và cũng không bị chín thì khi ngâm mắm ăn sẽ ngon và giòn hơn. Sấu mua về đem rửa sạch, cạo gọt vỏ bớt lớp chát. Đây chính là bí quyết để món sấu ngâm mắm được giòn đấy. Nếu muốn nhanh được ăn thì bạn có thể dùng dao khía sấu thành 4 miếng giúp nước mắm nhanh ngấm vào sấu hơn. Ngâm sấu vào nước có pha chút muối khoảng 30-60 phút để sấu bớt nhựa và không bị thâm.
Ớt rửa sạch, cắt bỏ cuống. Tỏi bóc vỏ, có thể để nguyên tép hoặc thái lát mỏng tùy vào sở thích. Chuẩn bị một lọ thủy tinh có nắp, tráng nước sôi, để ráo. Sau đó xếp sấu vào lọ rồi đổ nước mắm tỏi ớt đã nguội vào. Ngâm trong vòng 1 ngày là sấu ngâm mắm đã có thể ăn được rồi. Nếu muốn bảo quản lâu dài, bạn có thể để trong tủ lạnh.
