Cải bó xôi cắt bỏ phần gốc, rửa thật sạch. Đun nồi nước sôi, cho vào 1 thìa nhỏ muối, thả cải bó xôi vào luộc trong 1 phút rồi vớt ra.
Xả cải bó xôi đã luộc qua nước lạnh hoặc ngâm vào âu nước lạnh có thả vài viên đá để rau được xanh. Dùng tay bóp nhẹ để rau ra bớt nước.
Cho cải bó xôi vào âu, gỡ cho rau tơi, không bị cuốn rối vào nhau. Cho vào âu rau 2 thìa nhỏ tương ớt, 2 thìa nhỏ tương miso, tỏi băm nhỏ, 2 thìa nhỏ dầu vừng và vừng rang.
Tay đeo găng nilon trộn thật đều, vì tương miso có vị mặn sẵn nên bạn không cần thêm muối, để yên khoảng 15 phút cho rau ngấm gia vị.
