Xả cải bó xôi đã luộc qua nước lạnh hoặc ngâm vào âu nước lạnh có thả vài viên đá để rau được xanh. Dùng tay bóp nhẹ để rau ra bớt nước.
Cho cải bó xôi vào âu, gỡ cho rau tơi, không bị cuốn rối vào nhau. Cho vào âu rau 2 thìa nhỏ tương ớt, 2 thìa nhỏ tương miso, tỏi băm nhỏ, 2 thìa nhỏ dầu vừng và vừng rang.
